These coffees represent our bolder offerings. They tend to exhibit the earthy, smokey, heavier flavours often associated with dark roasting. Rather than roasting our coffees to an oily black, we select raw coffees with bold characteristics and then carefully craft roasting profiles that encourage the development of their inherent flavours. These volatile flavour oils do not survive the temperatures of dark roasting, so we do not roast them to oily black. The result is a luscious flavour profile not available in dark roasted coffees.
