This coffee is produced by a cooperative of indigenous farmers in Chiapas Mexico with members from many Mayan linguistic groups including Tzotzil, Tzeltal, Mame, Chuj and Zoque. These farmers are clustered in the southern highlands of Chiapas are within the buffer zone of the El Triunfo Biosphere. Together they have improved their environment, protecting birds and fish from harmful agrochemicals, and preserving and restoring forest like habitat. Their work was awarded the National Ecological Prize for Environmental Stewardship.

The environmental efforts were part of an integrated strategy to improve coffee quality and consistency and raise their standard of living. They pooled their resources to develop high quality techniques, standards and facilities balancing traditional rustic growing methods with and modern tools and techniques.
